if you do a private sale you can do it per'head. Also, some satellite sales can do it that way, but the negotiation gets more granular.
Most salebarns do it by 100 weight (every 100#) or sometimes by the pound.
Prices have been mostly up, but nothing like the increase for beef in grocery stores.
