I find a bit of the same with the unflavoured whey protein I buy (fast release, low lactose one) - my smoothies are a bit fluffy. Not unbearably so, but definitely fluffier. They seem to settle after a bit? I’m usually doing things like home made greek yoghurt + fruit + Almonds and/or seeds + lactose free milk with the powder.
