I use GrapheneOS and really like it. I get most of my apps from F-Droid with Aurora Store for the few Google store apps I care about.
It's a bit janky but also doesn't keep trying to upsell me cloud services, so big net win.
Downside: it only supports Pixel phones. I got lucky a few years ago with a really cheap used one (from the batch with slightly defective screens) and its upgrade, a steeply discounted Pixel 7(?), so it's an option but tricky.
