My hunch, at least beyond observable things like "faster speeds are more better", is that trading coax + phone for fiber might be more complex if we compare it one to one.
But if we compare both systems as a whole, having ubiquitous systems at every layer simplifies the entire system. There are no need for specialized telco switches, or whatever it is that backs coax. It's all just packets, routers, and switches all the way down.
