I have a birch tree, but it's struggling to just survive so I wouldn't consider tapping it.
I'm mostly just curious; though I do have some fairly healthy maple trees, they aren't sugar maples however.
Is the birch sap sugary enough to get much of a wine out of it or will you be adding more sugar?
