"content": "In the meantime, I've ended up with some leftover veg, and some leftover bones.\n\nSo, today, I've made chicken stock from the bones from a few weeks back (this will be frozen in ice-cube trays), and also have smoked some home-cured pork belly ready to be sliced into bacon (I'll most likely cube it rather than slice it).\n\nI also did a fridge clearout yesterday and made a batch of sofrito (onion, celery, carrot). I'm going to freeze this in a single bag, in one layer, on the basis that I can cut off as much as I need in one go.\n\nWhen I can - and I'm not always great at it - having a fridge clearout generally means that you turn up food that can either give you a couple of days, or can go into the the freezer for later.
