My analyses of such things (dreams, sexual fantasies, etc) are usually more mundane. I think, for a lot of people who indulge in it, incest fetishism is probably the desire for a girl-next-door or "sudden step-sister" kind of relationship where there is a degree of impropriety and a lot of sexual tension, rather than an actual desire for incest. Maybe not the case for everyone though. When indulging in a sexual fantasy, self-awareness and reflection is the key to avoid being overpowered by it and losing sight of what you actually want.
In terms of video games, it's much harder to analyse because your actions are so constrained by the game itself, that you can't express as much of your pure desire in it. Like in your minecraft example, killing creepers and zombies is just a matter of course for the game, as is cutting everything in half with a chainsaw in GoW (the 2nd game made me feel really depressed every time i played it, incidentally), so it's harder to see meaning in variations of playstyle.
