At the entrance there are two women who greet guests and direct them to their seats. They are always on the phone, chatting with whomever. Ramsay sees this and is not pleased. Heads will roll.
The greeters explain there are no guests, so they are doing whatever. But the Aryan comes from an unfathomable land of whimsy where they have eldritch concepts such as duty and virtue and tries to enforce these bizarre ideals on the sub-Saharan diner.
He brings Ms. Jean back to confront her greeters and a chimp out ensues. One of them storms out of the place, never to be seen again. In the mean streets of Africa, USA, she might as well have been eaten by hyenas on the way to her cave.
