Growing up in Northern New Mexico back in the 20th century, there were a lot of foods that people tend to associate with NM that were either rare or just didn't exist. Like:
* Tacos. The only place I ever saw tacos was at the school cafeteria.
* Hot sauce. The only bottled hot sauce was Tabasco and nobody I knew ever bought it.
* Jalapeños. We had loads of chile but not jalapeños. Güeritos we're probably the closest.
Am I missing anything?
