There's a rare I2C corruption issue on ESP32 when the system is under a lot of load, being tracked here:

We've been working closely with Espressif to debug this and are happy to say the root cause has been found. Patch is not public yet.
So if you've seen something weird when doing I2C on ESP32 and the circumstances might apply to your setup, a fix is coming!
Note: it had nothing to do with UDP or network, that was just part of the cause of the load
