They renovate the restaurant and Gordon makes all sorts of soul food items to replace the old menu, hopefully with items that will both be listed AND available to order.
The staff show up Africanised. This is never explained, but they now have African-style clothes for some reason.
After trying the White man's attempt at mimicking African excellence, Ms. Jean admits "I didn't think Gordon Ramsay could cook soul food but he has proven me wrong". The backwards White man, through his trials and tribulations, has learnt the meaning of soul food from these enlightened beings.
They never do this in other episodes, but this time they leave the camera rolling as the staff continue to guzzle down every meal Ramsay prepared. He's got the tribe's approval.
