Personally I like the flexibility of having multiple monitors more for everyday productivity tasks. I do get the appeal of the ultra wide monitors for gaming though. As for PbP, I can't see actually using that when FancyZones in Microsoft's PowerToys already works so well for me for subdividing space within a single display.
My current monitor lust is to find a good sale on the LG DualUp monitor to replace my main 16:10 display. It's essentially two 16:9 monitors worth of space stacked on top of each other on a single panel. That combined with a 9:16 portrait display of matching height to one side would be :chef's kiss: for me.
