Joplin is what I use and enjoy. Logseq is also promising if you prefer a mind-map style approach.
Both are open source, markdown under the hood, and easy to work with. Both are on just about every platform.
I use syncthing to copy notes around for both but primarily use Joplin on a daily basis.
