Lecithin is an emulsifier. It is a mixture of lipids which are partly made from fatty acids. Sunflower oil is pure fatty acids. The composition of the fatty acid chains in the lecithin is probably related to composition of fatty acids in sunflower oil. The amount of lecithin needed is pretty low and would represent a very small fraction of your fatty acid intake.
