Ok, you're halfway there (you've come to the realization that you need to be able to control your devices, and not have them control you)...but Apple's entire ecosystem is designed to prevent such "hanky panky".
Grab a Pixel 8a for $399 (on sale now), and load up #GrapheneOS - seriously.
(And if you sell that iPhone you'll probably end up with some money in your pocket too...)
