I'm familiar with construction unions. So plumbers, electricians, carpenters, ect .
I mean that the "total package pay" is top of market but the take home is less.
For example the market rate for a decent painter is around $26-$31/hr but a union painter might get $45-$55/hr total package pay. However, after union dues, insurances, retirement, ect are taken out, the take home pay for union workers is less.
That being said, I only know the construction unions. Manufacturing is different.
To you're point though, there are like 1000 different painting companies in my state (all different sizes). So the labor market is a little different than say working at the Ford plant. So you have a point. In most construction situations there isn't like ONE company to work for. Whereas in cars you have like 5 options nationally. So you have a point there.
