I've been making my Texas chilli today, and a few rules I learned over the years:
No beans, beans are a side dish for Texas chilli
Make a mole, it's easier than trying to make it in dish.
Bacon helps keep your fat content up without greasing it.
Corn flour (masa) to thicken.
Fish sauce for umami, and to respect the shrimpers.
