I've been on a bit of a journey of self-discovery with my cooking at our joint in the last year and it's been very enjoyable and also extremely soul-affirming.
Cooking food inspired by heritage can be very daunting. You're often not 'authentic' enough for the traditionalists, while at the same time too foreign for the unfamiliar.
So I've stopped caring and just cook what I think is tasty.
