Some do, but usually not. There are aggregating relays that serve events from many other relays. (filter.)nostr.wine is a very good (paid) relay which is nearly sufficient on its own.
Adding ~10 relays is a good bandwidth/battery usage compromise on mobile, on desktop you can easily add more.
There is also ongoing effort to make smaller/personal relays more useful by querying from relays specified by the authors IIUC (outbox model). Gossip does this for example.
Running your own relay is also good if you want to have a complete backup of your events, as long term storage on public relays is not guaranteed.
