Homemade natto, first batch
7/10, quite tasty, smells right and has strong threads
I should have boiled the soybeans longer, and removed more of the liquid before starting fermentation
At 16 hours of fermentation the smell was strong and unpleasant, at 20 hours still unpleasant but weaker. After 2 days in fridge smells very similar to Japanese store-bought natto
BTW, local supermarket mustard is quite similar to Karashi (also made from Brassica juncea seeds)
