I've just realised I've been really crap at CWing meat, so, um, yeah.

I've had a kilo of pork belly curing in the garage since last weekend, in a freezer bag. I've cleaned it off today, and put it back in.

It now needs to sit, uncovered, and aircure for another week or so - basically until it's lost about 20% of it's weight.

At this point, it will be unsmoked bacon, and I have the choice as to whether to smoke it or not. Most likely, I'll half and half it.
