The 🍉 pieces will still be quite hot to the touch, let cool a bit (still quite warm) & pack into a jar with the marinade.
I put in a bit of the🍉 then bit of marinade so I could distribute the kombu & chili, then rest of both.
Let it sit at room temp couple of hours till it cools then stick it in fridge.
Did this yesterday. Today took out a few pieces, cut them thinner (still quite crunchy!) and sprinkled sesame seeds.
Other way (per Andoh) is to have mixed w quick salted 🥒 slices
