You only have to be connected to relays that people you follow are connected to, if we only had one of these in the network (nicknamed "twitter" for instance) - it could censor, and ultimately control what people see. Kind of like Lightning nodes, it's fine to have few, as long as we can easily set up new ones, hopefully relays woud be incentivized to operate long-term.
