An old recipe from the Vaterland...
4 eggs, from local farmer
1 medium Zuchinini, fresh from garden
1 small bell pepper, fresh from garden
2 oz cheese, shredded from the grocery
1/4 oz olive oil, imported from Greece
A touch of Tony's cajun seasoning - a louisiana thing. Lol
Slice Zuchinini 1/4" thick
Stir 4 eggs well
Fry Zuchinini in olive oil in a large pan on medium heat
Turn upon browning and season with Tony's
Add bell pepper
Heat on low until pepper softened
Add stirred eggs
Top with cheese
Cook until eggs are done.
