I forget who started it but here’s my “hot take”: if the only way you define flavor in food is the scoville count, you’re a shitty cook.
Flavor and heat are not the same thing. Example: Cuban food, which has amazing flavor, and no heat.
Food should not cause pain on the way in and the way out. Stop hurting yourself because someone convinced you everything needs five kilos of hot peppers.
