The Art of Statistics - Learning from Data by David Spiegelhalter. It’s an easy read but has all the fundamentals you might need, at least in my opinion.
Besides that the lectures from Stanford for (I know you hate the term) Intoduction to AI
Cover a lot of ground when it comes to math
