I guess kind of to bring context to this quote a little bit more. I think what the chef was talking about is that when you're following a recipe, It is a rough guideline at best and should never be treated as gospel. You don't have to follow it to the letter. (Unless, of course, you're baking, that's a whole different realm. strictly talking about cooking here)

When you cook, you're using all five of your senses. And if you shut yourself off from rational thought and reasoning and just blindly follow a recipe, I can almost guarantee your food won't taste the way that you want it or the way that you're expecting to. Thus why I think it's not the recipe that's important, the person who's executing it.
