All of your mainstream apps will work on GrapheneOS. Only a tiny subset of apps will be available due to banning using a non-stock OS. Google's tap-to-pay isn't available, and some banking apps aren't. All the apps you use will likely work fine.
Apps are sandboxed whether or not you use a dedicated profile.
