oh that’s interesting, I don’t sweeten my oatcakes at all. I would use the hot water with 2oz butter, or lard (I know, but traditional recipe). A pinch of bicarbonate of soda and a pinch of salt. If not blending in a food processor, hand kneading is easier with a bit of cornflour or arrowroot to soften the dough (keeps it GF). Roll out thinly while still hot with a rolling pin and cut shapes with cutters. For more crunch use pinhead oatmeal rather than rolled oats (maybe in proportion 40:60).
