Miners hash the data of transactions in the mempool with a nonce gazillions of times a second.

The double hash 256 hashes are like lotto tickets. If you buy more lotto tickets, you have a better chance of winning. If you find a hash of the transactions and a nonce that is lower than the ptevious block, you are awarded the subsidy and fees.


Every 2 weeks(2106 blocks) the difficulty is adjusted based on the aggregate hash power is on the network to help keep it 10 minutes on average. It's actually a little less.

Here is the hash of the latrst block. Notice the leading hex 0's. If there are more zeros, it's more difficult. Less zeros is easier to find.
