Signal is an end to end encrypted messenger, but it's centralized, all messages go through the Signal servers. They claim to minimize the metadata they're able to collect and generally only keep what they have to and only as long as they have to. To my knowledge, there's no sign they've ever betrayed that plan, but you do have to trust them to.

SimpleX Chat is similarly end to end encrypted (I think, I don't think it was initially but is now, but not 100% sure on that, definitely coming soon if not here already), but it uses a relay system similar to nostr, and it doesn't have any sort of identity. To start a chat with someone on SimpleX, you open a channel with them on a relay, but if you start chatting with someone else, you open a new channel that may or may not be on a new relay, and there's no identity linking the two. Compared to something like 0xchat over nostr, this is more private so there's no real persistent identity outside of individual channels, but it can be more of a pain to make initial contact because you need to establish the channel without a persistent identity.
