Last night, I decided to give an ambitious artisanal bread a try. I'm a confident baker who bakes at least a loaf a week, if not three. So I took out my cloche, made my poolish last night, today folded the dough carefully, proofed it, baked it until it was mahogany-colored, and Loaf 1 was good. But it's late afternoon and I'm not even done with the Loaf 2. I have to say that I'm not eager to devote a full day to this again. it's good, but not worth giving up my writing time for it.
