Mimi's suggestion with the poached eggs was to lower the water temperature to just barely boiling to not break up the egg. She also suggests cracking the egg into a bowl or plate and gently sliding it into the water, instead of a vortex. I didn't try that but I'll probably try it in a big spoon or ladle next time.
