"People don't want preservatives or things that alter the pH in what they eat."
Man, chemphobia is so frustrating. Any compound that ionises to yield either H+ or OH- can alter pH. Vitamin C is an acid (ascorbic acid). Vinegar is an acid (acetic acid). Baking soda is an alkali (sodium hydrogen carbonate).
Anything you eat goes through your stomach which contains hydrochloric acid at a pH ~1.5-2, yet blood pH is ~7.4 (when healthy)
