I needed an S3 compatible API for a small thing and my first thought was of Minio. Apparently it changed a lot over the years and is no longer small and simple. Luckily, there's still competition in this market; I got garage (
https://garagehq.deuxfleurs.fr/) up and running in no time and it's a trivial, small daemon with very straightforward configuration.
